Watermelon cake recipe

I have created two different versions of this delicious watermelon cake!

One is completely clean, while the other ones icing is not

Either way I say it beat the normal cake! So ---enjoy either one, without guilt!!

First I make the Icing!

Icing Recipe #1
(Healthy Version )

2 cans full fat coconut milk (put in fridge for at least 6 hours a head of time)
1/2 tsp vanilla extract
1 Tbs raw honey

Directions:
Open cans of coconut and scrape out the cream into medium bowl.  (you can open can from bottom and pour the milk out into separate container before scraping it out, or you can discard milk)
Add the vanilla and raw honey to mixture
Whip the cream mixture together with a beater until fluffy (about 5 min)
*place in fridge until ready to use*

Icing Recipe #2
(Not so clean icing )

1 large jar of fluff
2 bricks of cream cheese

Directions:
Beat mixture together until blended

How to create the cake ...

Take a medium/large watermelon and slice top and bottom straight across

Then cut around the edges to create a round cake looking watermelon.

Once it is cut- wrap the watermelon in paper towel to absorb the moisture .

This step is very important to keep the icing from sliding off!

Once you have thoroughly absorbed the outside water apply the icing With a spatula.

Then onto decorating the cake!

I used raw sliced almonds on the sides and whatever fresh fruit I had laying around the house!

*Strawberries and raspberries would have been an awesome addition too! *
Once your cake is complete ----put in refrigerator for at least an hour before serving.

**Slice and enjoy !!!**

Healthy Snack ideas

Why oh why can healthy snacks be so hard!?!?!

I think we seriously over think snacking.... We do need to eat every 3 hours, so snacks are an important part of the day! But... keep it simple and PREPARE ahead of time!

Plan your snacks for the week... Prep them, put them in containers for each day and be done with it!

Make healthy snacking just as easy as junk food snacking! - prep and go!

The Goal is that at EVERY snack or meal you are eating a protein paired with a complex carbohydrate...

Many people fail to do this- especially during snacks!

Here are my top 10 healthy snack ideas. Most of these can be on the go snacks too!

1. Apples/Banana/Celery and Nut Butter

2. Smoked Wild Salmon and Whole Grain/Wheat or Brown Rice crackers

3. Cottage Cheese and any Fruit of your choice

4. Veggies and Hummus

5. Greek Yogurt, Fruit, Nuts and cinnamon
(Can add in flax, chia, raw honey etc)

6. Trail Mix
     *  I suggest throwing your own together to avoid added sugars in the dried fruit

7. Shakeology!

8. Celery and Salsa (pico de gallo)

9. Nut Butter and Brown Rice Cakes (you can even top with strawberries, bananas, raisins...)

and last but NOT LEAST...

10. Kale Chips (yes this is a source of protein and complex carb all in one!)

DIY Baby Wipes

What you will need:
1. Baby Oil
2. Baby Soap (I like organic)
3. Small roll of paper towels cut in half (use sharp knife)
4. A container (wipe container is fine- I bought a container from the dollar store and decorated it myself)

Place (ok more like JAM- if you use the type of container I have) paper towels into container)
* pull out cardboard center once all is in

When you pull out the center it should automatically pull up the center towels to create your wipes

Mix :
1 cup of warm water
1Tbs baby soap
1/2 Tbs baby oil

And poor mixture over paper towels

Let absorbs for a couple hours before using!

And voila! YOUR DONE!

Healthier, cheaper baby wipes!!!
