Try this Crock Pot Mexican chicken!
It is delicious and so easy!
I make this recipe on days that I know I won't have time to cook- prep time is literally 5 minutes or less!
Here is what you will need:
3-4 lbs of boneless skinless chicken breasts
4 large diced tomatoes
1.5 cups your favorite salsa (get organic or make it yourself to keep it clean)
2 tbs garlic powder
2 tbs crushed red pepper (can go lighter for less spice)
1 tbs black pepper
1 tsp cayenne pepper
1 jalopeno diced OPTIONAL(for added spice)
Directions:
Lay chicken in the crockpot and then ingredients all in.
Cook on low for about 5-6 hours or until all meat is white and soft
Shred chicken with a fork.
Serving options:
-Serve in whole wheat or sprout grain tortilla with guacamole, shredded cheese, beans, lettuce and salsa
- Serve on a bed of lettuce with tomato, avocado, and salsa
- Eat as is and serve with Mexican rice and beans
