The Ultimate Reset- Week 1


The Ultimate Reset


My Husband decided he was going to finally give the Ultimate Reset a shot!!
You can’t even understand how EXCITED I am that he made this decision!!!
He wasn't happy with who he was so he has made a choice to change!!

I personally cannot fully do the program right now because I am almost 9 months pregnant. However I decided to keep to the meal plan and modify where needed. 

I can not take any of the supplements either, so I am just sticking to the meal plan, adding in some additional foods since I  need to for my calorie intake (due to the baby, as well as for my workouts). 

I was so excited because he really does need it! And please don't take that the wrong way! I'm not speaking physical right now- I'm talking HEALTH!!  He has had so many health issues this past year I thought it was essential for him to give this a shot!





So the game planning began!  


I decided to create this chart to make it oober easy for him! 
All he has to do is copy and paste his meal options into the open blocks and his lovely, wife.. ME... will go grocery shopping and do all the cooking!!




Because he is more of a plain Pete he decided to stick to the more simpler meals throughout the entire week and phase 1. 

You can repeat your meals, for example he decided to have the eggs and toast and spinach all week, since he isn't a huge fan of plain oatmeal or the other options.  He also stuck to the vegan shakeology for all his snacks, while I explored the other options.  hehe

Sorry, but not sorry.. I LOVE FOOD !

So repetition it was and I am sure will continue to be as we move through the next two phases!

The rest of the week we tried out a couple different options for lunch/snacks and dinner and I must say I was pleasantly surprised at how delicious this food was!!


This was our breakfast for the majority of the week.. My hubby isn't a huge OATMEAL guy.... However we did enjoy the fruit salad as well!

This was our Lunch most days... Salad and Grilled Chicken..


This was part of our dinner on Day 1. These Beets and Sweet Potatoes were PHENOM!


The rest of the week we tried out a couple different options for lunch/snacks and dinner and I must say I was pleasantly surprised at how delicious this food was!!  

One of my favorite snacks aside from my shakeology.... APPLES AND NATURAL PEANUT BUTTER!

Vegan Tropical Strawberry Shakeology


This was one of our favorite meals actually... Baked Basil and garlic salmon with lemon juice, asparagus and potatoes.  
I am not a huge potato person... so I could have skipped them no big deal.. but we are trying to stick to the plan ! 

I thought I would seriously miss the meat on this one for sure.... I mean really a taco without the meat?! 

I actually didn't though! It was pleasantly delightful and I was majorly full I couldn't finish it!


My Husband over the course of the first 3 days... and yes I MEAN ONLY 3 DAYS... lost 10 lbs!!! 

Now he is a bigger guy, 6'2 and is very broad, so please don't compare your progress to his- but know that when you eat the right foods and truly do what is best for it... YOU WILL REAP THE AMAZING REWARDS!!!

 I am so proud of him!  I know the first three days were really rough for him as well. And honestly I think it depends where your starting from.  He was a total sugar addict!  And he gave it up cold turkey... so personally I believe weaning yourself of sugar and coffee prior to the reset may be your better option!!! 

He did have a headache and felt tired. But did begin to however regain energy and the headache went away after day 3.

Flourless Oatmeal Raisin Cookies

These are so simple and delicious!  Not to mention CLEAN!! 

Win- win! 


Here is what you need. 
 
4 ripe bananas
4 cups oatmeal 
2 tsp vanilla extract 
2 tsp cinnamon 
2 pinches of nutmeg 
1/2 tsp Himalayan Salt 
1/2 cup raisins 
1 Tbsp chia seeds (optional)

If you want them sweeter you can add in 2 tsp organic pure maple syrup 

Mash bananas and mix in the rest of the ingredients. 

Bake at 350 for about 11-15 minutes on middle/top wrack 

I make mine in muffin tins to hold them together better. And this way I make them thicker too! 



This is a great clean treat or even a quick breakfast!!

Healthy Shamrock Shake Recipe

Here is what you will need...

2Tbs Powdered Peanut Butter 
2 Tbs vanilla instant pudding (or cheese cake flavor) 
8 oz of unsweetened almond milk 
Splash of natural mint extract

Handful of ice 


Blend until smooth. 

Then drink like an Irish man!

From Sick Girl to Healthy Mom

Yesterday I was laying in bed and it all of a sudden dawned on me just HOW HEALTHY I have been this last year.

With so many changes and craziness going on in our lives, our move, the pregnancy, changing jobs... ect I have not really realized just how healthy I have been.

I went from healthy active Amie to that "SICK GIRL"

 always missing school and unable to play


You see as a 4th grader I became very ill. The doctors couldn't figure out what was wrong with me for a long time until I went to a specialist.  It turns out that I was diagnosed with Lyme Disease.
After being put on rigorous antibiotics I did get better.... however from then on it always affected me.

I had to be very cautious about getting enough sleep or else I would relapse and all my Lyme symptoms would come rushing back and I would get sick for days.

Lymes greatly weakened my immune system and if I was around anyone who was sick, forget it- I WAS TOAST! and not to mention I would get it 10x worse!

In fact I would get sicknesses that doctors literally couldn't even put a finger on. My tonsils were constantly infected and would often swell so much I was in excruciating pain to even swallow my own spit.

I could go on and on....

In more recent years, I have had chronic sinusitis and due to all the inflammation of my tonsils as a child my tonsils have gone bad, and now have craters in them that so lovely now form tonsil stones.
Not to mention I suffered for years with migraines, lows in my blood sugars and horrible digestion.

Last year after spending lots of time and money in the Ear Nose and Throat we collectively decided that it was time to get surgery.  I needed to get my sinus passages cleared and get my tonsils removed.

And as of right now, I cant remember the last time I went to the doctors.

I never went through with my surgery because I have not had tonsil stones, or any sinus problems. Which I am beyond thankful for! (although I am sure my ENT isn't so happy on missing out on thousands of dollars---haha)

 My headaches are virtually gone and my energy has sky rocketed.  (minus being 8 months pregnant and not getting good sleep!!)

My digestion that was horrible before, and doctors couldn't figure out what was wrong with me- is now completely normal!

One of my favorite ways to eat Kale is by baking it and making KALE CHIPS!
They are easy, fast and delicious!
 
 


I love to eat spinach in so many different ways!
I add it into my shakeology smoothies, eat as a salad, put in my eggs and even cook it on the stove in some chicken broth with onion and garlic for an awesome wilted spinach side!
 
 

Asparagus!!! Ah another love of mine! My absolute favorite way to make these little guys is to roast them in the oven at 400 degrees with olive oil, sea salt and some slivered almonds!
 
 
 
And BROCCOLI! Another great green that is delicious raw, roasted or steamed!
One of my families favorites is to just steam, add in some butter and garlic salt and serve!




and last but definitely NOT least... AVOCADO!! This is actually technically a fruit- and literally my favorite!!! My kids even love avocados!!
I love to eat these in my salad or blended in my smoothies.  But my all time favorite way to eat them is with just a sprinkle of garlic salt and pepper! Use a spoon and just scoop it out!

Apricot Craisin Chicken

My mom used to make this awesome apricot chicken that was I craving. She was un able to get me the recipe so I decided to create my own! It tastes slightly different than hers, but it still turned out delicious!!!

This is a nice alternative to the usual chicken dish!  If your craving something sweet for dinner, try this recipe out!  

so..here is what I came up with!

Ingredients:

2 LBS Chicken Breast, cut into cubes
2 Tbs coconut oil
Salt and Pepper
1 Large White Onion
2 Tbs apple cider vinegar
1 cup organic chicken broth
2 small jars of organic baby apricots
1/3 cup craisins

Directions:

Cube chicken and throw into large skillet with coconut oil.
Let brown slightly, then  throw in the onions and season with salt and pepper.
After onions become translucent add in 2 Tbs of apple cider vinegar and let cook off for about 3-5 minutes. 
Then add in Chicken broth, let come to a boil and then add in craisins and apricots. 
Reduce heat, cover and let simmer for about 15 minutes.


Serving Suggestions:
Serve over quinoa or basmati rice.
Pair with broccoli or green beans

Clean Banana Oatmeal Cookies


So you've been eating clean but now your craving a cookies what do you do!!??? 

Make some dang cookies of course!! 


But Why not whip up a easy clean cookie recipe instead!? 

These are so simple my kids could do it!! 
And not to mention delicious!! 

All you need are:
2 Bananas 
2 cups of oats

(These have 2Tbs of PB and some mini chocolate chips)

And mix together 

And add anything else you want to add in! 

You can add in anything! 
-natural peanut butter
-mini chocolate chips
-raisins
-craisins
-almonds
-walnuts
-coconut flakes
-vanilla 
-chocolate shakeology or protein 
-blueberries 

You name it! 
Get creative and enjoy!
 

Spray baking sheet. Bake at 350 for about 6-8 minutes!  
Keep an eye on them so they don't burn!
