Gluten Free, Dairy Free, Sugar Free Spaghetti and Meatballs


The Meatballs are the MAIN focus of this course!! 

My kids love meatballs and when we go to our local Italian restaurant if they don't want pizza, meatballs are the second one on the list! 

Because we have gone Gluten Free this has changed things a bit for us! 

Thanks to Costco it has made the sauce and pasta pretty dang easy for us... You will see what I used below!  

So onto the meatballs! (Said in an Italian accent 😜) 

I decided to make my own Turkey and Organic Ground Beef mix meatball. 

Here is what you will need : 

1 lb turkey 
1 lb organic grass fed beef 
1 small/medium white onion
1/2 cup Almond flour , (addition 1/2 or more to coat meatballs )
4 Tbs Dried Parsley 
2 tsp Italian seasoning 
1/2 tsp garlic salt or sea salt 
1/4 ground pepper 
1 Tbs of coconut oil to cook them in 

Directions 

Set oven to 400
Fork meats together 
Combine dry ingredients in seperate bowl 
Fork in dry ingredients 
Roll balls into 1 1/2 inch balls 
Roll them in the extra almond flour lightly (shake extra off)
In large pan heat almond oil and cook balls to lightly grown each side (about 3 minutes each side) 

Place balls on a baking sheet in the oven for about 25 minutes or until cooked through. 



Cook Gluten Free pasta on the stove with  salt. (Remember gluten is found in quinoa and brown rice---> thank you deceiving labels 😡) 

We love this edamame spaghetti (from Costco) , or garbanzo bean pasta!! (From whole foods) 


 Heat sauce (from Costco) in a pan on the stove and add in meat balls once fully cooked 


(ALWAYS CHECK INGRIDIENTS!!) 
** notice there is no SUGAR in this one! ** 

Once all is cooked, Add your saucy and balls to the pasta and ENJOY!! 


**A great side is steamed or baked green beans and or broccoli!! ** 


These meatballs can be frozen for later use too, making for a quick and easy HEALTHY and CLEAN meal in a pinch!

Gluten Free Banana Bread

This recipe is a good one! 
** you may want to make a double batch, it will go fast ** 


My son LOVES banana bread, and since recently going Gluten Free we have had to completely change our food game! 

We eat healthy, however our healthy included wheat and other grains.  

Now I'm exploring the world of Gluten Free, Dairy Free and Refined Sugar Free! 

This is a HUGE learning curve, but I'm actually really enjoying learning how to make NEW HEALTHIER, WHOLE FOOD recipes! 

Here is the Banana Bread Recipe : 

3 large Ripe Bananas 
2 Tbs melted coconut oil (plus a little more to coat pan) 
1/3 Cup blanched Almond Flour 
1/2 Cup Coconut Flour 
4 large eggs
3 tsp raw honey
1/2 tsp organic apple cider vinegar 
1 tsp baking powder 
1/2 tsp salt 
1/2 cup coconut milk 

Directions 

Preheat over to 350 

-mash up banana and milk together 
- in mixer blend eggs, honey, coconut oil, Apple cider vinegar until smooth 
- add in mixture of dry ingredients and blend 
-add the banana and milk and blend until smooth 

Coat pan with coconut oil and BAKE at 350 for about 45-50 minutes or until the knife comes out clean ! 


Let cool, and ENJOY!!

Chickpea Chocolate Chip Cookies

Who loves chocolate chip cookies? 

Come on fess up!! 

I know I'm not the only health nut who has a secret love for these babies!! 

So I have created a pretty dang good recipe that's is clean (minus the chocolate chips)  to enjoy when you are wanting a sweet treat! 


What you will need : 

Ingredients:

1 cup (2 cans) chickpeas, well drained and dried with a paper towel 
1/2 cup and 2 tsp natural peanut butter 
2 tsp vanilla extract 
1/4 cup raw honey
1 tsp baking powder 
Pinch of salt 
1/2 cup chocolate chips 

Preheat oven at 350

Directions :
Add all ingredient, except chocolate chips to food processor. Blend until smooth. 
Fold chocolate chips into dough 

Then create round balls, about 1 inch, with the dough (you will need to flatten a little if you want them to look like traditional cookies), place cookies on cookie sheet and bake for 10 minutes. 


Let cool and enjoy!! Without the guilt ;)

I wrote up a meal plan and decided which days I was going to start this program.  For me, I wanted to do mine during the week.  I felt I would be able to focus more during the week and not have all the outside distractions of not being on a schedule during the weekend. 

(NOTE: my meal plan is modified because I am breast feeing- refer back to your Manual to see what you should be eating!) 

This will take a little planning and a little bit of prep if you want it to be stress free and successful! I promise though, YOU CAN DO IT! It is only 3 days out of your entire life! So be prepared to KILL IT, no excuses and too will feel and see the results ! 

** Update, I am still breastfeeding, however my son is now 1 and is eating mainly all whole foods, so he nurses only once or twice a day, therefore my calorie intake does not have to be so high anymore....

I lost 3 lbs, but more importantly, I am feeling much better and also completely killed off any of my cravings I was having before.  

I truly feel like a NEW person!

OMG Baked Salmon

So when I first saw a salmon recipe with soy sauce, lemon, ginger and cinnamon I I almost cringed.

But then I decided to live on the edge and give it a shot with a little twist! 
And much to my surprise it's actually possibly one of the BEST and most DELICIOUS baked salmon I have ever had! 
**no joke**



Here is my OMG baked Salmon recipe: 
A large wild salmon flank 
 2 Tbs melted butter  (Irish butter)
1/4 cup amino acids 
1 Tsp lemon Juice 
1/2 Tsp ginger 
1/4 Tsp cinnamon 
1/8 Tsp pepper 

Mix together and poor over salmon

Bake at 325 for 25 minutes or until flaky .


TIP * good sides are quinoa, and steamed green beans or broccoli

Healthy Buckeye Dessert Recipe

Oh my goodness I think I just died and went to heaven! 

NO GUILT BUCKEYES!!! 

YES PLEASE! 


Did you know you can enjoy this amazig treat and NOT be cheating on your diet!!? 

The last two days I have been playing around in the kitchen and today I created this delightful healthy treat!! 

Just be sure to put them away at 2!!! You may be tempted to eat the entire box! 


Here is what you will need.... 

2/3 cup natural PB 
2 Tbs raw Honey
2 Tbs cocoa nibs 
3/4 cup organic oatmeal 

Coating 
1 scoop chocolate shakeology
2 Tbs coconut oil 



Mix all of the ingridrients together.... Then roll into balls about an inch wide and place on a cookie sheet with wax paper. 

Then melt the coconut oil (it melts quickly) and mix the coating up with the scoop of chocolate SHakeology. 



Spoon the chocolate mixture over the oatmeal, PB balls. 

Then stick in the freezer for about ten minutes. 

Once coating is hard... They are good to go. 

ENJOY these amazing cookies... Without feeling guilty! 

Be sure to keep in freezer until ready to be eaten!

Chocolate Shakeology Pancakes

Are you a pancake lover?? 

In all honesty I am not a HUGE fan... But my husband and kids are.  So I have had to come up with creative ways to keep them happy and HEALHY! 

I decided to create a chocolate peanutbutter pancake for them using the most nutritious meal on earth, shakelogy! 

So this means they are eating veggies.... In their chocolate pancake and not evening knowing it!!  SAY WHAT! 

These are Kid tested and Husband approved!!! 


So here you go... 

You will need :
2 whole eggs
1 small ripe banana 
2 Tbs heaping PB2
2 Tbs heaping of chocolate shakeology
If desired- a couple dark chocolate chips or cocoa nibs 


Whip together and Cook on stove like normal pancakes. 

You can eat these with a drizzle of pb2 mixed with milk or water on top!
