Chickpea Chocolate Chip Cookies

Who loves chocolate chip cookies? 

Come on fess up!! 

I know I'm not the only health nut who has a secret love for these babies!! 

So I have created a pretty dang good recipe that's is clean (minus the chocolate chips)  to enjoy when you are wanting a sweet treat! 


What you will need : 

Ingredients:

1 cup (2 cans) chickpeas, well drained and dried with a paper towel 
1/2 cup and 2 tsp natural peanut butter 
2 tsp vanilla extract 
1/4 cup raw honey
1 tsp baking powder 
Pinch of salt 
1/2 cup chocolate chips 

Preheat oven at 350

Directions :
Add all ingredient, except chocolate chips to food processor. Blend until smooth. 
Fold chocolate chips into dough 

Then create round balls, about 1 inch, with the dough (you will need to flatten a little if you want them to look like traditional cookies), place cookies on cookie sheet and bake for 10 minutes. 


Let cool and enjoy!! Without the guilt ;)

Frozen chocolate peanut butter yogurt dots

Do you love those frozen little ice cream balls called dots!? 

I have always loved them!! But now eating healthier they don't really fit the menu all that great. 

Here is a new delicious clean twist!! 

What you will need: 
1 serving of vanilla Greek yogurt 
1 Tbs of natural peanut butter 
Dark chocolate shavings (optional) 

Mix together and place in zip lock baggy cut corner off 

Squeeze some out onto a pan, sprinkle with chocolate and freeze. 

Once hardened you can enjoy your own frozen yogurt dots--  And all for under 200 calories!

Healthy Dark Chocolate, PB2, Banana Pancakes

Who else loves PEANUT BUTTER,  CHOCOLATE, AND BANANAS??

I know I sure do! That is one of my favorite combinations!!!!

so today I got this clever idea of taking those ingredients and putting them into a pancake!!!

Now I have no idea why I didn't think of this recipe until today... but better late than never!!!

And did I mention these are GUILT FREE!!!
WAHOOO...JUMP FOR JOY.. Happy Dance

oh ya and the kids will love it too! BONUS-BONUS!

So here is the simple, yet amazing breakfast everyone will be sure to enjoy!


Ingredients:

-1 1/2 ripe or over ripe banana (can get by with only 1 large banana if you cut some off for topping)
-2 eggs
-1 tsp cinnamon
-1tsp vanilla
-2Tbs PB2 (1 for pancakes, 1 for topping)
-1/4 cup dark chocolate almond milk (for topping)
(can add in cocoa nibs if desired, or any ground flax or chia seeds for added nutrition)

**this will make about three pancakes, which is a good serving for me**

Directions:

  1. whip two eggs together
  2. Mash Banana in a bowl
  3. Add in 1 Tbs of PB2 to eggs and mix well to get clumps out
  4. Add banana and egg mixture together
  5. add in vanilla and cinnamon
  6. cook on stove like normal pancakes
TOPPING
  •  On stove top cook sliced bananas for a couple minutes
  • while bananas cook mix 1Tbs of PB2 to the Dark chocolate almond milk
  • Then poor over bananas and let thicken for about a minute or two
  • once done drizzle over pancakes


and enjoy!!!
