Blueberry, Orange Creamsicle

Need a clean summer treat to beat the heat this summer!? 
My kids love these! Heck, I love these!! They are great to hit that sweet spot and to cool you off!!

You will need 1/2 cup plain Greek yogurt 

***you can add more Greek yogurt to make it more creamy if desired!
Greek Yogurt, Blueberry, Orange, Creamsicle, Clean popsicle, Clean Eating, Healthy dessert, Healthy food, Kid friendly healthy food, greek yogurt, Amie DeSanzo, Fearless and Fit, Popsicle, Homemade popsicle

1 cup blueberries
And 2 1/2 oranges 


I juiced the oranges to make about a cup of pure, fresh squeezed orange juice!! Yum! 

I then put all ingredients into the blender and gave it a spin until mostall the   blueberries were liquified (it's ok to have some chunks!) 



Once it was done I pored it into my ice pop molds and froze !  

Give these babies a couple hours and they are ready to devour!! These are Loved by the kids!! Sometimes I even let them have two! (An mommy may sneek one or too 😉) And may I add - with NO GUILT!

Clean cookie dough

Cookie dough Greek yogurt!!

Oh ya! If your cravings some chocolate chip cookies but want to keep it clean then try this recipe out!!

-3/4 cup plain Greek yogurt 
- 1 tbs nut butter 
- 1 tbs honey 
- 1/4 tsp vanilla 
- pinch of sea salt 
- 1 tbs dark chocolate chips 

Mix it all up and eat it up! :)

PAPA's PICO DE GALLO


Papa's Pico

This pico-de-gallo recipe is my dad’s (aka PAPA). My family is CRAZY for Mexican food!!! So whenever we get together or go visit one another it goes without say WE WILL be having a Mexican feast! This includes Pico, Guacamole, Fajitas, Margaritas and more! We go all out! Of course we keep it as clean as possible! 

But PAPAs PICO is literally amazing! And I eat it for days later in my eggs, on steak, in a baked pepper, with celery. You name it, I put it on it! Honestly its my favorite thing EVER! So if you want a good pico, HERE YA GO! 

Ingredients 

-About 10 Roma Tomatoes
-1/2 a bunch of cilantro diced
-1 Lime (juiced)
-1 Medium white onion (may only use half)
-2-4 finely chopped jalapeños (depending upon how spicy you want it- be careful and taste as you go, because some peppers are mild and others are HOT!) 
-Sea Salt/Himalayan Salt to taste 

Dice all ingredients up. (We use the Vidalia Chop Wizard https://www.chopwizard.com/ )

Let sit for a couple hours so spices and flavors blend.

It should look like this!!! Once it sits for a while you can eat it up with all kinds of goodies!

**Also, I make some guacamole by cutting and mashing up a couple avocados and then spoon in some pico.  You may need to add another squeezed lime and some garlic salt!

AH so good! Just looking at this is making my mouth water! I think I may go make some right now !

CLEAN PUMPKIN RAISIN PANCAKES

YES, I said it! Clean Pumpkin Raisin Pancakes!!!
These suckers are actually good for you! And did I mention they are stinken AWESOME!

Pumpkin Pancakes, Clean pancake recipe, Clean pancakes, pumpkin, rolled oats, cottage cheese, vanilla, egg whites, raisins, agave nector, clean eating, clean breakfast, healthy breakfast, breakfast, pancakes, Amie DeSanzo, Fearless and Fit

I know you just want to eat them off the Page! Ok maybe you don't, but I DO!
Here is the recipe....

1/2 cup of pumpkin puree
1/2 cup quick or rolled oats
1/2 cup low fat cottage cheese
4 egg whites
1 1/2 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin spice
2 Tbs raisins (or how ever many you would like in there)
1/2 tsp agave nector

mix all up and cook on stove like normal pancakes. Make sure to let cook all the way through before flipping, otherwise they will fall apart (coat the pan well too!! I like to use coconut oil)

For the topping....
I caramelized the pecans in a little bit of coconut oil (or a little butter), a couple shakes of cinnamon, about a tsp of vanilla, few squirts of agave and about 1/3 cup almond milk  (sorry I am really bad at measuring- I just throw stuff in)

Cook on medium heat until mixture becomes thicker, if it cooks down too much add a little more almond milk until the consistency you want.

Chocolate Peanut butter Over night Oats

When I get up to start my day I get up and start moving! Often times I don't have time to focus on breakfast with all the running around and work and kids! So my saving grace many times are my over night oats!! I looooove them! I am still looking to explore new flavors. Most of the time I just throw a bunch of stuff together and they turn out pretty good!!

Here is my recipe for the chocolate peanut butter over night oats!  

1 cup rolled oats 
1/2 cup plain Greek yogurt 
2 heaping tbs of natural peanut butter 
2/3 cup unsweetened almond milk 
1 tbs chia seeds (I use ground chia bad flax mix) 
OPTIONAL- 1 to 2 tbs of chocolate shakeology (can use protein powder as well) 
1 small banana cut up  

Mix all ingredients together and put in fridge over night. 




Ok so this is Huuuge !! Yep ! I make a double batch so I can either share with the kids or save it for the following day!!  

Did I mention I LOVE my OATS!!  

In the morning you can top it with anything you like.  I topped mine with cocoa almonds(you could even crush these up and add them to your recipe so you get a little in each bite!!!)
THIS IS DEEEELISSSHHH!!

***You can always add more peanut butter or chocolate shakeology to enhance the  flavor to your liking!! Experiment with it to fit your taste buds!

Healthy stuffed Turkey Burger

Ok... So my husband has been having some medical issues - so I did some research to really make Food his Medicine! So of course that meant a huuuuge grocery bill later I am concocting some recipes. 
This one is a turkey burger stuffed with garlic, onion and pinto beans! 
 

Here are the ingredients
1.2 lbs extra lean ground turkey
2 garlic cloves (minced)
1 small white onion, or half of a medium one (minced) 
1/2 a can of pinto beans 
1/2 tsp onion powder 
1/2 tsp garlic powder 
1/2 garlic salt
1/2 tsp ground flax/chia seed
1/2 tsp brewers yeast 
1/4 tsp turmeric. 
1 egg white

Lightly use some Ground pepper 

Beat together until most beans are broken up and divide into patties 

Then Throw me on the grill !! 
 
While they cook on the grill I am using the rest of the cut onion on the stove to sautéed in some garlic and olive oil.  

 Sautéed on medium low heat and cover. 
Once they turn translucent and soft they are done !! 

Then to create the burger I uses a half of a whole wheat bun. Stacked with lettuce tomato, the turkey burger and onions. 

Eat with a fork and knife!! Or else you will have it sliding all over the place! ;) 

Enjoy this heart healthy clean burger all summer long!
