Papa's Pico
This pico-de-gallo recipe is my dad’s (aka PAPA). My family is CRAZY for Mexican food!!! So whenever we get together or go visit one another it goes without say WE WILL be having a Mexican feast! This includes Pico, Guacamole, Fajitas, Margaritas and more! We go all out! Of course we keep it as clean as possible!
But PAPAs PICO is literally amazing! And I eat it for days later in my eggs, on steak, in a baked pepper, with celery. You name it, I put it on it! Honestly its my favorite thing EVER! So if you want a good pico, HERE YA GO!
-About 10 Roma Tomatoes
-1/2 a bunch of cilantro diced
-1 Lime (juiced)
-1 Medium white onion (may only use half)
-2-4 finely chopped jalapeños (depending upon how spicy you want it- be careful and taste as you go, because some peppers are mild and others are HOT!)
-Sea Salt/Himalayan Salt to taste
Dice all ingredients up. (We use the Vidalia Chop Wizard https://www.chopwizard.com/ )
Let sit for a couple hours so spices and flavors blend.
