CLEAN PUMPKIN RAISIN PANCAKES

YES, I said it! Clean Pumpkin Raisin Pancakes!!!
These suckers are actually good for you! And did I mention they are stinken AWESOME!

I know you just want to eat them off the Page! Ok maybe you don't, but I DO!
Here is the recipe....

1/2 cup of pumpkin puree
1/2 cup quick or rolled oats
1/2 cup low fat cottage cheese
4 egg whites
1 1/2 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin spice
2 Tbs raisins (or how ever many you would like in there)
1/2 tsp agave nector

mix all up and cook on stove like normal pancakes. Make sure to let cook all the way through before flipping, otherwise they will fall apart (coat the pan well too!! I like to use coconut oil)

For the topping....
I caramelized the pecans in a little bit of coconut oil (or a little butter), a couple shakes of cinnamon, about a tsp of vanilla, few squirts of agave and about 1/3 cup almond milk  (sorry I am really bad at measuring- I just throw stuff in)

Cook on medium heat until mixture becomes thicker, if it cooks down too much add a little more almond milk until the consistency you want.
