Healthy Cookie Dough Dip
- 1 1/2 cups chickpeas or white beans (1 can, drained and rinsed very well) (250g after draining)
- 1/8 tsp tsp salt
- About 1/8 tsp baking soda
- 2 1/2 tsp pure vanilla extract
- 1/4 cup nut butter of choice (I used Justin's Almond Butter)
- up to 1/4 cup almond milk (add at end)
- 3/4 cup coconut sugar
- 1/3 cup chocolate chips (I used minis)
- 2 Tbs ground flax
- 3 Tbs ground oats
**Sweetener Notes: I used 2/3 cup coconut sugar. You could use alternate sweeteners like liquid sweeteners (agave, maple, etc.) or evaporated cane juice.
Serve with graham crackers or apples.
