Ingredients:
-1 1/2 ripe or over ripe banana (can get by with only 1 large banana if you cut some off for topping)
-2 eggs
-1 tsp cinnamon
-1tsp vanilla
-2Tbs PB2 (1 for pancakes, 1 for topping)
-1/4 cup dark chocolate almond milk (for topping)
(can add in cocoa nibs if desired, or any ground flax or chia seeds for added nutrition)
**this will make about three pancakes, which is a good serving for me**
Directions:
- whip two eggs together
- Mash Banana in a bowl
- Add in 1 Tbs of PB2 to eggs and mix well to get clumps out
- Add banana and egg mixture together
- add in vanilla and cinnamon
- cook on stove like normal pancakes
- On stove top cook sliced bananas for a couple minutes
- while bananas cook mix 1Tbs of PB2 to the Dark chocolate almond milk
- Then poor over bananas and let thicken for about a minute or two
- once done drizzle over pancakes
and enjoy!!!
