What would Thanksgiving be without the Sweet Potato Soufflé??!
I mean seriously this is one dish I look forward to!!! ok. lets be honest. I look forward to ALL of the food my family makes on Thanksgiving! But this one definitely is a favorite. This was my Moms recipe... but it needed some updating... because lets be honest, IT WAS MORE LIKE A DESSERT! So I had some cleaning up to do without changing the amazing flavor. So here is what I came up with!

3 cups mashed sweet potatoes
or yams (about 4 large)
1/2 cup organic Maple Syrup
2 eggs
1/2 cup almond milk
1/2 tsp. salt
1 tsp. vanilla
Directions:
Peel and cube potatoes,
boil until fork tender but not too long or they
get too saturated with
water.
Drain.
Mix with a hand mixer
and add rest of ingredients and Mix.
¼ organic maple Syrup
¼ cup coconut sugar
1/2 cup almond or whole
wheat flour
1 cup chopped pecans
1/2 stick of butter
Bake in casserole dish
30 to 40 minutes but watch that the topping doesn't
get too brown.
Place foil over the top if it does.
Especially when you reheat if you make ahead of time.
ENJOY!!!
Just try to remember portion sizes on this bad boy!!! Even though its Thanksgiving, its not an excuse to over stuff!
Not to mention you wont feel that great later! Enjoy every bite within your portion !!!
