Mashed Cauliflower

 Do you love your mashed potatoes???


I know they are a huge hit during Thanksgiving.. Did you also know there is a much healthier way to get the same great taste but by using Cauliflower?!

I know your doubting me.... but seriously IT TASTES ALMOST EXACTLY THE SAME!!!  and with much less guilt!!! This is a great way to swap out a Starchy Carbs, since I am sure you will be getting enough in other places this Thanksgiving!

So here it is!!!!


Ingredients:

1 head cauliflower
3 tbsp olive oil (or butter)
1/3 cup non fat butter milk (or add 1 tbs lemon juice or vinegar to 1 cup milk)
4 cloves of garlic, peeled and crushed
garlic salt to taste
pepper to taste
1/4 cup cheddar cheese - low fat (optional)
(optional) freshly snipped chives for garnish



Directions:
steam cauliflower
once soft, put it in blender with other ingredients and blend
once blended can drizzle some extra olive oil on top along with garnish of chives



Super Easy and Delicious!
